This week in the kitchen

Monday/2-Jul-18: Dinner was a halfish recipe of Coriander-Thyme Lamb Chops with Yogurt Sauce (CL/may15; web). Pretty good this was. Cooked the chops under the broiler. The honey in the yogurt sauce really wasn't necessary. With one store-bought tub of (full-fat) yogurt (125ml), there was more than enough sauce.  Served with Moroccan couscous, from the health-food store, and some asparagus steamed over water with a big sprig of mint and some lemon peel and topped with a vinaigrette of olive oil, lemon juice, and minced mint (Thesaurus, p130).  We enjoyed half of a bottle of Brousse Terre des Sens (Gaillac) as an accompaniament.

Tuesday/3-Jul-18: Using up lots of odds and ends from the freezer, dinner was a half dose of Poor-Cousin Paella (Secrets, p249), more or less. The meats were chorizo, cooked chicken, serrano ham, scallops, and shrimp. For veggies there was a green bell pepper, artichoke bottom, and green peas. Then a salad. Finished the Brousse for wine. Some chocolate topped madelaines for dessert.

Wednesday/4-Jul-18: Shopping today, a big one, refilling the larder. A storm came through while we were in the store. On the way home we saw the biggest hail we've seen since moving to Europe. Got home to find our pergola cover shredded. No other major damage we'd found. We're lucky.

Dinner was Spicy Swordfish and Artichoke Kabobs (web), made with tuna since there was no swordfish. The recipe says the fish and artichokes should be marinated at least four hours. Mine were only about 30 minutes; one or two hours might be nice, but overnight would be too much. Served with orzo and the last four asparagus stalks I had. (None at Leclerc today.)

Thursday/5-Jul-18: Dinner was late, since I was a bit disorganized when it came to cooking today. We had Baked Rishta (Noodles) with Eggplant I (Roden, p272; cookbooker). No fresh noodles, maybe later in the month. Good stuff, this, although it could have used a bit more spaghetti. Served with Spinach Salad with Yogurt (Roden, p68). Some fruit for dessert.

Friday/6-Jul-18: Dinner was Roasted Lemon Garlic Herb Shrimp (web). (Can't find the site where I got my copy of this, but that's the same recipe.) Then a big salad. Then some chocolate covered corn flake cookies. We had a visitor—one of our neighbor's rough-haired dachshunds was in our yard. Normally he's quite a barky thing, protecting his home turf, but was quite sweet in our yard.

Saturday/7-Jul-18: Early meal today before going for to a concert. We had Melon Zucchini & Pancetta (PatSalads, p22; cookbooker). Turns out I'd made it before but didn't write anything in the book. This time with serrano ham instead of pancetta, and with frisée, which we don't ordinarily like but worked here.

From the storm we've also found a broken tile on roof of the kitchen porch and a hole in the birdbath.

Sunday/8-Jul-18: Ed sang with Cantique today; pizza afterwards. Nothing happened in the kitchen, except ...

Yogurt on overnight.

This week in the kitchen

Monday/25-Jul-16: Finished off the Dried Apricot & Amaretto Conserve (FancyPant, p127). I goofed and added the orange juice with the peel, so it got boiled more than it ought to have been. (Used only two cups of sucre de canne, rather than 2-1/2.) In the end the whole thing didn't gel, so I added a whole packet of pectin. Poured into three AH jars, then realized I forgot to stir in the amaretto. Since there were three tablespoons needed, I stirred one into each jar before closing them up. Seems like a lot of almond slivers. We'll see. Froze two jars, since we've got several active jars of jam right now, and left one in the fridge to give away.

Made paneer, which was a part of our Mutter Paneer dinner. Some mini magnums for dessert.

Tuesday/26-Jul-16: So Ed could get one with painting windows and doors, I did the shopping after my audiologist appointment.

Got home to find we've been invited from champagne apertifs with our new next-door neighbors, Emmanuelle and Pierre, who live in Bordeaux.

Dinner was Tomato Fish Curry on rice, with some Mango-Mint Sherbet to follow.

Wednesday/27-Jul-16: Lunch out with friends today. Nothing happened in the kitchen. It's hot too.

Thursday/28-Jul-16: More Indian tonight. This time Onion Bhajiyas followed by Bombay Chicken Masala, served with plain basmati rice and leftover Spiced Beets and Mutter Paneer. Actually, I should have saved one of the veggies for tomorrow night, since we were quite full.

Friday/29-Jul-16: A busy day in the kitchen today.

I accidentally defrosted some pecans and walnuts. Until I started making Peppered Pecans (Tabasco, p14), I thought they were all pecans. Have to find something else for the walnuts.

Shopping Tuesday, I bought a flat of peaches for Peach Cobbler (EatingTog, p59), intending to make it Monday. But the peaches are getting pretty ripe, so I made the cobbler today.

Dinner was Lamb Kebabs, served with Kachumber (30MinInd, p37) and Jeera Rice (30MinInd, p99). Had the Tamarind&Date Chutney and the Lemon Pickle on the table. I had meant to serve some of the Mango-Mint Sherbet for dessert, but with fresh peach cobbler available, who could resist that? With a bit of cream. Yum.

Saturday/30-Jul-16: Another day with lots of kitchen work.

  • Used up the bit of rhubarb I had to make Rhubarb Chutney (Thesaurus, p255) again. This was extra good with boudin noir.
  • Roasted two eggplants for tomorrow.
  • Made two pâte brisées (Tenth, p256), one for tonight, the other for the freezer. Once you're making one, the second is easy and uses up the other half of the block of butter.

Dinner was, more or less, Broccoli and Gorgonzola Quiche (web) with a big, plain salad (only croutons, no extra veggies). No picture necessary, a relief.

Thinking about next month's book for Cookbook Countdown. It should be the Time-Life Viennese Empire book, but I'm not finding that many recipes I want to cook right now. There are lots of interesting recipes with sauerkraut, but it's not in the shops right now. TBD.

Ed's eaten all the pecans.

Sunday/31-Jul-16: We had our main meal early today so that we can go to a movie this evening. We had a half dose of Shawarma-Spiced Grilled Chicken with Garlic Yogurt (web). Had thought to bbq, but just grilled them instead. No matter, very good. I made sure to have lots of yogurt for the Garlic Yogurt sauce, but didn't make it in the end. Served with pita breas, the leftover green chutney, and Baba Ghanoush (WofE, p334), which probably wanted more lemon juice but I'm out of lemons. (I took two packages of four lemons to the check-out earlier this week. When I got there, I saw there was I moldy lemon in one of the packages. It was too busy to walk back and get another package, so I did without. But I'm now completely out of lemons.)

This week in the kitchen

Monday/20-Jun-16: Dinner tonight was Sunshine Roast Chicken (Jamie/?; web). This recipe was from a Jamie Magazine feature for six days of cooking mostly based on this chicken. I'll be using most (or all) of the remaining chicken for a meal later this week. The roast chicken was super. It was sitting on top of veggiest (sweet potato, corn cobs in small bits, onion, lemons, and garlic). Juice from the roast lemon halves went into a yogurt-garlic sauce and into some quickly sautéed spinach as a side. Altogether easy and worth doing again.

When I stopped for bread today, I got one slice of the boulanger's wonderful chocolate-walnut tart, which we split for dinner.

Tuesday/21-Jun-16: Lunch out today. Nothing happened in the kitchen.

Wednesday/22-Jun-16: Ed's off to sing again tonight, so we had our main meal early. I picked the meat from the chickie and used some of it for Firecracker Chicken Noodle Salad (Jamie/?web). (Funny that this recipe is on the Jamie Mag site, but the roast chicken, from which the meat was supposed to come, isn't.) A yummy little salad. Mini magnums for dessert.

Thursday/23-Jun-16: Oops, forgot to make yogurt last night, so it's on overday.

Dinner was soup, Mushroom-and-Potato Soup, yummy, if not appropriate for the hot day. For dessert, we had fresh picked raspberries with cream.

Friday/24-Jun-16: Shopping today. Label Rouge chickens on a really good sale. Could I resist? No. How can I make progress on my frozen chicken backlog if I keep buying them? And onions from this continent were hard to find. I finally found some bio (organic) ones from France, but otherwise the closest were from Egypt. New Zealand onions were cheap. Why? There were no red onions to be found.

Made some Apple-Plum Butter (HandyBook) in the afternoon.

Dinner was Lingcod with Garlic and Tomatoes, with a bit of trio rice by its side. For a salad, I made (more or less) Mangetout and Avocado Salad (web), which was just so-so. (The ingredients sounded good, but they didn't mesh.) For dessert, some little vanilla custards, bought from the short-date bin, but only because the packaging was damaged. (I don't really care if the plastic cups are dented myself.) Topped with some raspberries from the garden.

Saturday/25-Jun-16: Used the leftover veggies from the Sunshine Roast Chicken to make (loosely) Spicy Veg & Lentil Soup from that recipe group for tomorrow's dinner. (Can't find it on the web.)

Used the last, rather limp rhubarb stalks from the fridge to make Rhubarb Chutney (Thesaurus, p255, under Rhubarb & Oily Fish). Put this in the freezer to serve with boudin noir next time.

Tonight's main was supposed to a chicken with shrooms kind of thing from TLNorthW, but I forgot to by the mushrooms, so I improvised a spatchcocked roast chicken with potatoes and carrots. On the way to a good idea, if not entirely successful. Followed by a simple salad with Blue-Cheese Salad Dressing topped with croutons. Ended with the nice dented cups of vanilla custard.

Sunday/26-Jun-16: Tonight we had  the Spicy Veg & Lentil Soup for dinner, and pretty good it was.

Yogurt on overnight.
