This week in the kitchen

Monday/11-Dec-17: Went to make lamb chops today and discovered that I forgot to remind myself to put them on to marinate. Oops. Put them on to marinate for tomorrow, so they'll have almost 24 hours rather than only 8 hours.

Instead we had Copycat Panera Macaroni and Cheese (web). Wasn't bad at all. Actually the recipe is quite similar to the my usual mac-and-cheese recipe, without the minced onions. Both have too much liquid. Otherwise very tasty. Don't know Panera.

Yogurt on overnight.

Tuesday/12-Dec-17: The marinated lamb turned into Grecian Lamb with Herbed Yogurt Sauce (CL92, p158). The lamb marinated a bit longer than the recipe intended, but it was good. Served with the last of the Moroccan couscous I got from the health food store and Fassolakia Freska—Green Beans with Onion and Tomato (Meze, p79; cookbooker)

Wednesday/13-Dec-17: Dinner out this evening. Nothing happened in the kitchen.

Thursday/14-Dec-17: Doug's funeral today.

Dinner was Sarah's Slow Cooker Greek Chicken Gyros (web), made in the slow cooker. Served with flat breads (which I didn't bother to heat up, so they were a bit brittle), and chopped cuke, tomato, onion, and arugula.

Yogurt on overnight.

Friday/15-Dec-17: Soup for dinner, Pumpkin and Coconut Soup (SoupBible, p70). I made a full recipe. We ate all the solid bits and have quite a bit of flavorful broth in the freezer to use for something else. Not too hard to make, but took me a bit of time, especially for pounding the aromatics. Used raw frozen shrimp, not all that small. Used coconut milk and cream. Tasty and filling.

Saturday/16-Dec-17: Dinner out tonight. Nothing happened in the kitchen.

Sunday/17-Dec-17: Stamppot with zuurkool and smoked sausages for our meal today. Simple and delicious.

This week in the kitchen

Monday/13-Aug-12: Dinner was Spicy-Sweet Glazed Shrimp (web) which was essentially grilled shrimp basted with a sauce of sriracha and honey (approximately 1:2). Since sriracha is pretty sweet in itself, this turned out to be a  nice combination, that could be used on chicken or other meat. For a salad, I started with a recipe with roasted beet, green beans, and onion. The beet was already roasted. I roasted up the last of the neighbor's green beans (still have some of the yellow ones left), then some onion, and then a couple of mushrooms that were wanting to be used up. Tossed this with a splash of balsamic vinegar, then topped with some crumbled blue cheese (also need to be used), and the beets. Surprisingly, the beets were the bit that didn't fit in, so we both ate these separately. Good try, though. All alongside some polenta. For dessert, the last of a bit of Raspberry Sorbet topped with some mixed berries.

Tuesday/14-Aug-12: Dinner was Fresh Linguine with Garlic, Herbs, and Goat Cheese (web). "Herbs" it says, but there's only tarragon. And there was no fresh tarragon in the store, so I used dry. Tasted fine. I put a stickie on the cutter box to help me remember to try rolling only to 5 (rather than 6) before cutting. This cutter makes pairs of strands that aren't really separate, so you waste a lot of time pulling them apart. Maybe if the dough is thicker, it would cut better? Then a salad. And some mini-Magnums for dessert.

Wednesday/15-Aug-12: We ate at the commune's fête this evening. Nothing happened in the kitchen.

Thursday/16-Aug-12: Shopped today. Not too much off piste buying. Dinner was a half dose of Baked Flounder (Essential, p401), with plaice instead of flounder, because that's what there was. This was good, but surprisingly bland; improved at the table with more salt. Served with a rice pilaf and (sort of) Green Beans with Ginger and Garlic (Essential, p260). For dessert there was Lemon-Blueberry Yogurt Loaf (web), quite a nice thing, although my blueberries mostly sank in spite of being floured.

A whole day passed with no zucchinis eaten or otherwise used. The pile is getting bigger. Next year, only one plant, we've agreed.

Friday/17-Aug-12: Busy day in the kitchen. Yogurt on overday. Oven-Roasted Tomatoes and beets a-roasting. Chicken stock a-simmering. Apple butter a-bubbling.

Dinner was Red Lentils with Zucchini (WorldVeg, p70). Pretty good stuff. Made a whole recipe and froze half. Served with rice and Carrot "Raita" (WorldVeg, p547), which was also good, a change from the recipe I usually use, slightly sweet because of the carrots.

Kip filets for Chicken Tikka marinating overnight.

Saturday/18-Aug-12: Two Indian nights in a row could be considered poor planning. Tonight we had some pretty good Chicken Tikka, an old recipe from my 2BTried cookbook (which I seem to have collected twice, since I found the same recipe, differently edited, in my Keepers cookbook). Did it under the broiler since it was really too hot to crank up the bbq. Used the last four filo sheets (these kept surprisingly well, back in the packaging in a ziploc in the fridge) to make Potato and Pea Samosas using the same recipe I used in February, but with half the potatoes, peas, and onions, and all the spices. The cook got to munch a bit of leftover filling, naughty. There was Fresh Green Chutney (Q&E, p113) as a go-with. I used up the neighbor's yellow green beans and the end of a sack of frozen green beans to make Tangy Green Beans with Ajwain and Ginger (SpiceKitch, p38), which is my go-to recipe when I need something colorful to brighten up a monotone Indian meal. No dessert at all, since we piggily finished off the Blueberry Yogurt Loaf at lunchtime.

Sunday/19-Aug-12: Authentic French Bread on this morning. Yogurt on overday.

Soup day. Batch #1: Friday's chicken stock and three globe zucchini became Zucchini Soup with Pasta (SoupBible, p33). I blended this up rather than leaving the zuke and onion in pieces. Pasta will get added when it's defrosted. Batch #2: Stock from the freezer plus one big regular zucchini became Cream of Zucchini and Carrot Soup (IsItSoup, p92). This needed cream cheese and I just happened to have some in the fridge waiting to be used up. (Only in the last couple of months have I see Philadelphia cream cheese at Leclerc. And a good thing because what I was using instead just wasn't as good. In NL, Philadelphia cream cheese has been available for quite a while as well as a decent substitute.)

Dinner was Middle Eastern Chickpea Platter (web), a really nice summer meal ready in about 20 minutes. Sautéed eggplant and garlic mixed with beans and parsley and a dressing of tahini, lemon juice and water. Served on a platter with tomato slices (deseeded), red onion slices, feta, and black olives. Just the thing for a hot night.

Just when I was congratulating myself on making a big dent in the zucchini population, we picked on huge and one regular of the straight ones. There are three globe ones growing. Sigh.

This week in the kitchen

Monday/14-Nov-11: For lunch, I made a half dose of Cauliflower and Walnut Cream Soup (SoupBible, p47; cookbooker), using up the rest of the cauliflower. Easy and good. Even Ed, who's not a cauliflower fan liked it.

Dinner was also fast and tasty. Spanish-Style Tuna and Potato Salad (CL, soon to be MC, cookbooker). Good, but more appropriate for the summer I expect. Some St. Felicien for afters.

Tuesday/15-Nov-11: Ed's birthday day, so we lunched out. Nothing happening in the kitchen all day.

Wednesday/16-Nov-11: Salmon for dinner, appearing as Dad's Famous "Pink Fish" (HEB, p148). Pretty good, if a bring strong with soy sauce. And rice. Then a big salad with an oriental dressing I made a while ago and didn't use. Otherwise pretty quiet in the kitchen, since we're both tired out from a long walk this morning.

Thursday/17-Nov-11: Best-laid plans for dinner, gone awry. Instead there was leftover sorrel-onion tart, still good. And a salad. Finished off the St. Felicien after line dancing.

Friday/18-Nov-11: Defrosted some turkey scallops for a simple dinner. Floured, sautéed, and topped with a lemon-caper pan sauce. Some trio rice and peas on the side. Some Lindt chocolates and breakfast cookies for dessert. That's all.

Saturday/19-Nov-11: Off to a commune dinner this evening. Nothing happening in the kitchen.

Sunday/20-Nov-11: Finished off our bread at breakdfast and no one wants to go to the boulanger. Made Whole Wheat with Bran (BigGerman, p81) (WW/Rapid/Med/—). What a high, beautiful, lovely smelling loaf came out!

This time of year, when the sun is low, is a big discouraging housekeeping-wise. All the dust, and spots on the floor that want to be mopped are clearly visible, as they aren't when the sun is higher. I'm startled at how dusty this house is. I dusted the bedroom well one day and the next day surfaces were dusty again. In Amstelveen, we had forced air heating, so I'm guessing the filter on that system removed much of the dust.
Put together the pickled green beans for Thanksgiving today.
Homemade fettucine for dinner with a half dose of Ligurian-Style Pasta Sauce with Zucchini and Carrots (MarCuc, p159). Pretty good but not my favorite of her pasta sauces.

This week in the kitchen

Monday/5-Sep-11: Off at a quiz tonight. Nothing much happening in the kitchen. Did make a start on washing the new dishes.

Tuesday/6-Sep-11: Yogurt on overday.

It was unplanned, but today turned into a kitchen day. Started quince jelly, using the quince I bought at a vide grenier on Sunday. Baked a Pear Bundt Cake (MC) using pears that Ed brought home from choir practice last week. Now I've got some oldish plums plus a big pile of raspberries that Barbara sent this afternoon that need to be dealt with.

Washed more of the new dishes and realized that Ed has a counting problem. There are 23 each of the salad and soup plates. Washing on a "space available" basis, it may take quite a while to get them all done.

Dinner was Amy's Grilled Chicken Breasts (MC), which was good. Accompanied by grilled potato slices, parboiled first, then coated with a half and half mixture of mayo and dijon mustard; quite good, although I cooked them a bit too long before the grilling. And for our daily zucchini, there was Courgette, Lemon, & Ricotta Salad (Jamie mag, soon to be MC). Very easy and quite good, this was. Followed by pear cake, of course.

Wednesday/7-Sep-11: Shopped today, after another trip to Emmaus. Got some sorrel, have to adjust the menu plan. Didn't finish the quince jelly or make apple-plum butter or deal with the raspberries today.

For a starter, we had Jamie's leftover salad. It held up remarkably well, making me think it might be happier marinating longer than the 10 minutes suggested. Then we had a half dose of Noodles with a Carrot Cream Sauce (KnowHow, p245, cookbooker), which was interesting. Then a plain-ish salad. Didn't feel like dessert and it was too late anyhow.

Thursday/8-Sep-11: Finished off the quince jelly this morning, two small pots. It should have had lots of pectin, but didn't seem to want to set. I added a bit of sugar with pectin to help. It took ages to get up to the right temp (maybe the first time I've used that thermometer), but it finally did. Hope it will be set when it cools.

Also made a double dose of apple-plum butter, using some of the cheap, but tasty, fall apples from the store and some plums that need using (they were tasty enough, but dry and unpleasant in the mouth). That turned into a single dose actually, what with the small apples and boiling it a bit too long.

Used Barbara's raspberries to make up the "broth" for raspberry sherbet. Surprise—there were some strawberries in the bottom of the box. I took care of those all by myself.

Dinner was Creamy Zucchini and Dolcelatte Soup (SoupBible, p53). It was good. Might be good with broccoli too.

Friday/9-Sep-11: Yogurt on overday. Didn't get the sherbet made. Tomorrow.

Dinner was a repeat from last year's sorrel season, Risotto con Gamberi e Acetosa (Wild Sorrel and Prawn Risotto (WildCarluccio, p20). Yum. And a salad with half a big tomato, deseeded, from the garden. Bonne Mamam baba au rhums for dessert. (On sale at the grocery.)

Saturday/10-Sep-11: Another walk with meal this evening. Pretty quiet in the kitchen all day.

Sunday/11-Sep-11: Froze up the Raspberry Sherbet (Scoop, p132) this morning. Filled a liter freezer bakje quite full.

Picked 1.5 kilos of assorted cherry tomatoes today. And more than 3 kilos of beefsteak tomatoes. The biggest beefsteak baby was 675 grams.

Dinner was Penne or Rigatoni con Zucchine (Top100Pasta, p44), using the zucchini I collected today. It was good, but the mozzarella didn't melt as it ought to have, so the sauce was a bit stringy. Tasty though.
